A fabulous holiday collection for fans of Cabernet Sauvignon. This selection includes 2 bottle of each of the following wines: 2018 CS Cabernet Sauvignon – Aromas of black currant, tarragon, and pipe tobacco. Flavors of cassis, leather, and graphite complement this wine’s fine-grained tannins and balanced acidity. 2019 CS Cabernet Franc – Aromas of red plum, leather, and dried herbs. Flavors of blackberry and wet stone accompany this wine’s fine-grained tannins with a long finish. 2019 CS Meritage – Notes of sandalwood, savory herbs, and cassis on the nose. Flavors of blackberry preserves, cigar box, and molasses fill out this full-bodied wine. Balanced, with plush fine-grained tannins and a long finish.

This collection includes 2 bottles each of the following wines: 2021 CS Chardonnay – Our 2020 Cavern Select Chardonnay has aromas preserved lemon, spiced apples and dried pineapple. A rich and creamy mid palate complements a lingering toasted oak finish. 2021 CS Syrah Rose – The 2021 Cavern Select Rosé is bright pink in color with green mango, hibiscus, and stone on the nose. Flavors of blood orange and strawberry compliment the crisp acidity on the finish. 2020 CS GSM – The 2020 Cavern Select GSM has notes cherry preserves, tarragon, and anise on the nose. Flavors of kola, candied red plum, lavender on the full mid-palate with fine grained tannins with a smooth finish.

Thacher Stables Tasting which is offered most Friday-Sundays at 11am and 2pm. These two hour elevated tastings allow for one-on-one attention with a dedicated wine educator who will guide you through a selection of exclusive wines: from rare oddities and library offerings to new releases and blend deconstructions, to reserve wines and more. The Stables Tasting takes place in chic and newly renovated, old horse stables and are limited to a maximum of 16 fully COVID-19 vaccinated adults, ages 21 +.
